Here is our breakdown article covering the new Assassin's Creed Valhalla information, coming from a variety of sources who have access to a demo version of the game.
We have split all of the info into relevant sections, and will be updating the article as more details are released about the new game.

Combat/ Enemies / Battles
Valhalla has the largest variety of enemies ever assembled in an Assassin's Creed game, each offering a unique challenge. Enemies will use objects around them to help in combat, including the bodies of fallen warriors. (B)
You can snare enemies using your Viking harpoon (similar to a rope dart), overwhelm opponents using throwing axes, or even keep them at a distance using the new stun system before finishing them off. (B)
You can stomp on enemies to finish them off. (C)
Side quests Valhalla introduces a new quest structure, with a focus on 'main storyline' narratives. During the demo, Zoe Delahunty-Light noted a lack of side quests. (C)
Raids are intense mini assaults that unlock nation chests and war supplies.You'll also uncover resources for your settlement. To start a raid, blow your horn at the gates of the village to summon your army. (C) The crew will assist on all raids: fighting enemies, breaking down doors and stealing cargo too heavy to move on your own. (B)
Arrows can not be crafted in Valhalla, but are instead salvaged. You can steal them from quivers or find them in enemy camps. (C)
Enemies will work together to ambush Eivor. During the demo, bandits can be seen emerging from bushes before beginning an attack. (C)
At the heart of the settlement is the alliance map, which serves as a record for the allies made in the game and lists future opportunities. (B)

Mysteries, Puzzles and Clues
Assassin's Creed Valhalla is scheduled to launch November 17th 2020 on Xbox ONE, PS4, PC and Google Stadia, with a next gen launch coming at a later date. (A)
Exploration is a vital part of the game: hunt and forage to replenish your health and improve your equipment.
The more you explore, the more of England's secrets will be revealed. (B)
The new quest system is broken down into three sections: Wealth, mysteries and secrets. Each of the new quest types are 'fairly short' stories that encourage the player to explore and interact with the world. (C)
Cats can be recruited to your longship. According to Eivor, this is for good luck and to deal with the rat problem. (C)
Health does not regenerate over time. To restore your health, you need to eat mushrooms, raspberries and golden raspberries. Once you are at full health, any extra resources that you pick up becomes rations that you can use later on. (C)
Valhalla introduces a new radial menu, from which you have the options to: use a torch, disguise yourself with a hood and cloak, summon your longship, call your horse, blow your horn for raids and meditate. (C)
Your horse has a gallop meter, so you can choose when to speed up or slow down. (C)
